Description

Delicious garlic herb chicken served with creamy mashed potatoes and sweet glazed carrots.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 pounds potatoes, peeled and diced
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 2 tablespoons honey

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add minced garlic, thyme, and rosemary.
  3. Add chicken breasts and cook until golden brown on both sides.
  4. Transfer chicken to a baking dish and bake for 25-30 minutes.
  5. In a pot, boil diced potatoes until tender, then drain.
  6. Mash the potatoes with milk and butter until creamy.
  7. In another pan, sauté carrots in honey until glazed.
  8. Serve chicken with mashed potatoes and glazed carrots.

Notes

  • Serve with a sprinkle of fresh herbs for garnish.
