Delicious garlic herb chicken served with creamy mashed potatoes and sweet glazed carrots.
Ingredients

- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 pounds potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- 1 pound carrots, sliced
- 2 tablespoons honey
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and add minced garlic, thyme, and rosemary.
- Add chicken breasts and cook until golden brown on both sides.
- Transfer chicken to a baking dish and bake for 25-30 minutes.
- In a pot, boil diced potatoes until tender, then drain.
- Mash the potatoes with milk and butter until creamy.
- In another pan, sauté carrots in honey until glazed.
- Serve chicken with mashed potatoes and glazed carrots.
Notes
- Serve with a sprinkle of fresh herbs for garnish.
- Adjust seasoning to taste.
