- 2 celery stalks, diced

- 1 bay leaf

- 1 cup feta cheese, crumbled
- 4 slices crusty bread
Instructions
- In a large pot, heat a tablespoon of oil over medium heat.
- Add the onion, carrots, and celery, and sauté until softened.
- Stir in garlic, thyme, and lentils, cooking for 2-3 minutes.
- Add the broth and bay leaf, bring to a boil, then reduce heat and simmer for 35-40 minutes until lentils are tender.
- Season with salt and pepper, and remove the bay leaf before serving.
- Toast the bread until crispy, then top with crumbled feta.
- Serve the soup hot with the crispy bread and feta on the side.
