Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, baking powder, baking soda, salt, and spices.
- In another bowl, whisk eggs and sugar until fluffy. Add pumpkin and vanilla.
- Combine dry ingredients with the wet mixture until just mixed.
- Spread the batter evenly on the prepared sheet and bake for 15-20 minutes.
- Remove from oven and let cool slightly, then roll in parchment paper.
- In a separate bowl, beat cream cheese, powdered sugar, and butter until smooth.
- Unroll the cake, spread the cream cheese mixture, and roll the cake back.
- Chill for at least one hour before serving.
Notes
- For a richer flavor, add a pinch of cardamom to the batter.
