Ingredients

- 500 grams chicken breast
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 lime, juiced
- 1/2 head of cabbage, shredded
- 1 carrot, grated
- 200 grams natural yoghurt
- 1/4 cup fresh mint, chopped
Instructions
- Marinate chicken with curry powder, lime juice, and olive oil for at least 30 minutes.
- Cook the marinated chicken in a pan over medium heat until fully cooked.
- In a bowl, combine shredded cabbage, grated carrot, and lime juice to make the coleslaw.
- In another bowl, mix yoghurt with chopped mint for the mint yoghurt.
- Serve the curried chicken alongside the lime coleslaw and drizzle with mint yoghurt.

- Adjust the amount of curry powder to taste.
- Can substitute chicken with tofu for a vegetarian option.
