A delicious blend of curried chicken served with a refreshing lime coleslaw and mint yoghurt, perfect for any meal!


Ingredients

  • 500 grams chicken breast
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1/2 head of cabbage, shredded
  • 1 carrot, grated
  • 200 grams natural yoghurt
  • 1/4 cup fresh mint, chopped

Instructions

  1. Marinate chicken with curry powder, lime juice, and olive oil for at least 30 minutes.
  2. Cook the marinated chicken in a pan over medium heat until fully cooked.
  3. In a bowl, combine shredded cabbage, grated carrot, and lime juice to make the coleslaw.
  4. In another bowl, mix yoghurt with chopped mint for the mint yoghurt.
  5. Serve the curried chicken alongside the lime coleslaw and drizzle with mint yoghurt.
