Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup bourbon
  • 1 cup soy sauce
  • 1 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon olive oil
  • 2 tablespoons cornstarch
  • 3 tablespoons water

Instructions

  1. Place the chicken thighs in the crock pot.
  2. In a separate bowl, mix together the bourbon, soy sauce, brown sugar, garlic, ginger, and olive oil.
  3. Pour the mixture over the chicken in the crock pot.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Once cooked, remove chicken and set aside. Mix cornstarch and water, then add to the sauce in the crock pot to thicken.
  6. Return the chicken to the pot, stir to coat in the sauce, and serve.
