Ingredients

  • 1 pound chicken thighs
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes or until the rice is cooked.
  4. While the rice is cooking, heat oil in a skillet over medium heat.
  5. Season the chicken thighs with garlic powder, ginger powder, salt, and pepper.
  6. Cook chicken in the skillet until browned and cooked through, about 6-7 minutes per side.
  7. Slice the chicken and serve over the coconut rice. Drizzle with soy sauce and lime juice.
