- 2 cups jasmine rice
- 1 pound chicken thighs
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 tablespoon oil
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes or until the rice is cooked.
- While the rice is cooking, heat oil in a skillet over medium heat.
- Season the chicken thighs with garlic powder, ginger powder, salt, and pepper.
- Cook chicken in the skillet until browned and cooked through, about 6-7 minutes per side.
- Slice the chicken and serve over the coconut rice. Drizzle with soy sauce and lime juice.
Notes
- For extra flavor, marinate the chicken in coconut milk and spices for a few hours before cooking.
- Garnish with fresh cilantro or sliced green onions.
