- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 tablespoon ground cinnamon
- 1/4 cup sugar for cinnamon topping
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, mixing until just combined.
- Fold in sour cream and cinnamon until well combined.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Allow to cool at room temperature, then refrigerate for at least 4 hours.
- Sprinkle cinnamon sugar topping before serving.
Notes
- For a more intense flavor, use Mexican vanilla.
- Chill overnight for best results.
