Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 tablespoon ground cinnamon
  • 1/4 cup sugar for cinnamon topping
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat cream cheese and sugar until smooth.
  5. Add vanilla extract and eggs, mixing until just combined.
  6. Fold in sour cream and cinnamon until well combined.
  7. Pour the cheesecake mixture over the crust in the springform pan.
  8. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  9. Allow to cool at room temperature, then refrigerate for at least 4 hours.
  10. Sprinkle cinnamon sugar topping before serving.

Notes

  • For a more intense flavor, use Mexican vanilla.
