- 2 cups sugar cookie crumbs
- 1 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup whipped cream
- 1/2 cup sprinkles
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the sugar cookie crumbs and melted butter, then press the mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese and sugar until smooth.
- Add vanilla and eggs, mixing until well combined.
- Stir in sour cream and mix until smooth.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Remove from the oven and let cool before refrigerating for at least 4 hours.
- Top with whipped cream and sprinkles before serving.
