  • 1/2 cup strong brewed coffee, cooled
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/4 cup chocolate shavings for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another large bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually mix in the dry ingredients alternately with the brewed coffee.
  6. Fill cupcake liners about two-thirds full and bake for 18-20 minutes.
  7. Let cool completely.
  8. In a separate bowl, whip heavy cream with powdered sugar until stiff peaks form.
  9. Pipe or spread the whipped cream on top of cooled cupcakes and garnish with chocolate shavings.
