Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, taco seasoning, and salsa.
  3. In a greased 9×13 inch baking dish, layer half of the tortilla strips, followed by half of the chicken mixture, and half of the cheese.
  4. Repeat the layers with the remaining ingredients.
  5. Bake for 25-30 minutes until the cheese is bubbly and golden.

Notes

  • For extra spice, add jalapeños to the mixture.
  • Top with fresh cilantro before serving for added flavor.
