- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup butter, softened
- 2 large eggs
- 4 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ginger
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the pumpkin puree and eggs, and mix until well combined.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, and ginger.
- Gradually add dry ingredients to the pumpkin mixture and stir until combined.
- Roll dough into balls and coat in cinnamon sugar.
- Place on baking sheet and bake for 10-12 minutes.
- Let cool before serving.
