Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, maple syrup, and softened butter until well combined.
- Add brown sugar and vanilla extract, then mix until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until just combined.
- Add walnuts if using, and fold gently.
- Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are set and the tops are slightly cracked.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Make sure to use pure pumpkin puree, not pumpkin pie filling.
- Store cookies in an airtight container for up to a week.
