A comforting and hearty potato soup infused with cheddar, garlic, and herbs.
Ingredients

- 2 pounds potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Add diced potatoes and broth. Bring to a boil and then simmer until potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Return the soup to low heat, stir in heavy cream, shredded cheddar cheese, thyme, and parsley. Season with salt and pepper to taste.
- Serve hot, garnished with additional herbs if desired.
Notes
- For a thicker soup, blend more of the potatoes.
- Feel free to add additional herbs or spices to customize the flavor.
