Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and cook for another minute.
  3. Add diced potatoes and broth. Bring to a boil and then simmer until potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  5. Return the soup to low heat, stir in heavy cream, shredded cheddar cheese, thyme, and parsley. Season with salt and pepper to taste.
  6. Serve hot, garnished with additional herbs if desired.

  • For a thicker soup, blend more of the potatoes.
