Ingredients

  • 1 head cauliflower, grated
  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Add the diced chicken to the bowl and toss to coat.
  4. Spread the chicken on a baking sheet and roast for 20-25 minutes, or until cooked through.
  5. While the chicken is cooking, grate the cauliflower to make ‘rice’.
  6. In a pan, sauté the cauliflower rice over medium heat for about 5-7 minutes until tender.
  7. Once the chicken is done, assemble the bowls by layering cauliflower rice, chicken, black beans, corn, diced tomatoes, and avocado.
  8. Serve warm and enjoy!
