- 1 head cauliflower, grated
- 1 pound chicken breast, diced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup diced tomatoes
- 1 avocado, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
- Add the diced chicken to the bowl and toss to coat.
- Spread the chicken on a baking sheet and roast for 20-25 minutes, or until cooked through.
- While the chicken is cooking, grate the cauliflower to make ‘rice’.
- In a pan, sauté the cauliflower rice over medium heat for about 5-7 minutes until tender.
- Once the chicken is done, assemble the bowls by layering cauliflower rice, chicken, black beans, corn, diced tomatoes, and avocado.
- Serve warm and enjoy!
Notes
- For extra flavor, add your favorite salsa or hot sauce.
- This recipe can be made vegan by substituting chicken with tofu or tempeh.
