Ingredients

  • 4 slices turkey bacon
  • 1 can black beans
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 4 eggs
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy.
  2. Remove the bacon and chop it into bite-sized pieces.
  3. In the same skillet, add onion and garlic, sauté until translucent.
  4. Add the black beans, diced tomatoes, chili powder, salt, and pepper to the skillet, stirring to combine.
  5. Make small wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs set to your preferred doneness.
  7. Garnish with chopped turkey bacon before serving.
