Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1 cup marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain.
  3. In a bowl, mix ricotta cheese, garlic powder, and Italian seasoning.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetables, and a layer of mozzarella.
  6. Repeat the layering process and top with marinara sauce and remaining mozzarella.
  7. Sprinkle Parmesan cheese on top.
  8. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
  9. Let it cool for a few minutes before serving.
