- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 2 cups spinach, fresh
- 1 cup zucchini, diced
- 1 cup bell peppers, diced
- 1 cup marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain.
- In a bowl, mix ricotta cheese, garlic powder, and Italian seasoning.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the vegetables, and a layer of mozzarella.
- Repeat the layering process and top with marinara sauce and remaining mozzarella.
- Sprinkle Parmesan cheese on top.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
- Let it cool for a few minutes before serving.
Notes
- For a richer flavor, add more vegetables or herbs as desired.
- Let the lasagna sit for about 10 minutes before cutting into it for cleaner slices.
