- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- ½ cup granulated sugar
- 1 large egg
- ¾ cup buttermilk
- ¼ cup unsalted butter, melted
- 1 cup peeled and diced apples
- ½ cup brown sugar
- ¼ cup all-purpose flour
- ½ tsp ground cinnamon
- 2 tbsp unsalted butter, softened
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat the sugar and egg until fluffy. Add in the buttermilk and melted butter, and mix well.
- Combine the wet ingredients with the dry ingredients, being careful not to overmix. Gently fold in the diced apples.
- In a separate bowl, mix together the brown sugar, flour, cinnamon, and softened butter until crumbly. This will be the streusel topping.
- Fill the muffin cups with batter about 2/3 full and sprinkle the streusel on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For extra flavor, add chopped nuts to the streusel.
- These muffins can be frozen for up to 3 months.
